I love eating salads as a full meal. The recipe below is the perfect hearty salad as a whole meal or even as a side. It's fresh and nutritious and will certainly leave you completely satisfied. The recipe is super easy to make, and it stores really well. I like to make it it the morning and have it for lunch later in the day.
The combination of red wine vinegar and olive oil in this salad is spectacular. English cucumbers are deliciously crunchy, and the smooth and creamy avocado and perfectly ripe sweet heirloom tomatoes all go so well together. Sometimes I'll grill chicken or just boil it in salted water and mix it into the salad.
